More on the flavour: This is a very mild tasting tree blossom honey. It has one of the lightest tastes in the world of honey, it is a little like a soft vanilla and cream. This comes from bees feeding on the Acacia blossoms on the Bulgarian Acacia trees. It has a very low glucose content so tends to always be in a runny state, the tree has been well known throughout history as a source of medicine by the African tribes, Greeks, Romans and European settlers.
Colour: This particular honey is a very light golden colour, very nearly clear.
Where does the honey come from?: This variety of acacia honey comes from Gorna Oryahovitsa in Bulgaria. It is situated at the northern foothill of the Tarnovo Elevations, a beautiful landscape with a rich and ancient history.
Who produces this honey?: This acacia variety comes from Ivan. A young and fastidious beekeeper who is very concerned with details and getting it just right. He has a systematic approach and colour codes his hives, this stops the bees getting confused and heading to the wrong hive where a fight may ensue! Ivan is going through organic certification and is in his last year, it takes 3 years to obtain.
What about the tree the honey comes from?: The Acacia tree is actually a flowering plant which is part of the legume family. It is also known as the black locust tree due the black legumes which grow on the tree and give the appearance of locusts. There are an incredible amount of species, all produce a light beautiful smelling nectar that the bees love.
Common Uses: Acacia honey is particularly good to use on irritated skin, it has a soothing effect and can help repair wounds, infections and damage. It is also very versatile in different recipes, such as: cakes, cookies, desert toppings, ice creams, warm honey teas, salads and meat glazes, this is because of its light flavour it does not tend to alter a dishes taste.
Acacia Honey Facts: Acacia honey has a very low glycaemic index, therefore it is more suited for those who can be sensitive to sugar for different reasons. This also means the honey stays in a pristine looking state, like a clear liquid gold.
